Therefore, we have summarized in this blog two recipes for making sweet foams with a whipped cream siphon that you are sure to love. Let’s get to work!

Preparing your cream siphon

Before starting your recipe, the primary thing is to have a cream siphon on hand. A cream siphon is an aluminum dispenser in which the nitrous oxide or N2O gas (needed for this recipe) gets released. This last is usually contained in a cream charger of 8g or a giant cylinder such as ExoticWhip of 640gr.

Ready the siphon and N2O? It’s time to refill the dispenser. Do it as follows:

  1. First, place the siphon on a flat surface. Then, remove the siphon head.
  2. Pour in your foam mixture and screw the head back on.
  3. Remove the cover of the filling reservoir (located on the head) and put it in the 8g cream cartridge. When you have placed it correctly, it is time to screw the reservoir cover back on. You will notice that by screwing it on, you simultaneously open the gas capsule and thus start to release the gas into the bottle.

The fourth and final step is to shake! Shake before moving on to sweetening your desserts. Remember to shake moderately to blend the contents and not aerate the mixture more than expected.

Two Best Recipes for Sweet Foams with a Cream Siphon

Strawberry Sauce Foam

To make a sweet strawberry sauce foam, you need about:

  • 300 grams of strawberries passed through the blender,
  • 50 grams of sugar or 20 grams of stevia
  • Thirty grams of whipping cream
  • Two grams of xanthan gum (vegetable binder and emulsifier) and one gas charge in the siphon.

Preparation

Start by blending the strawberries and removing the small pips with the help of a filter. The liquid needs to be without pips. Then add the juice, cream, and xanthan gum to the blender beaker. Once ready, store the mixture in the refrigerator to cool or serve immediately, depending on its use.

If you prefer to make the strawberry sauce foam, pour the result into the siphon (best with a funnel). Shake the siphon vigorously and let it rest for a while in the refrigerator. Then, shake the siphon again, put it vertically, and press the lever carefully until you see that the mixture comes out.

You can apply this delicious strawberry sauce foam to your favorite desserts. For example, tartlets, as a filling for custard and cream cakes, etc.

Chocolate Mousse

A delicious chocolate mousse is another excellent and easy recipe to prepare sweet foams using a cream siphon.

For this, you need:

  • 125 grams of whipping cream
  • 125 ml milk (better whole, for desserts)
  • Two egg yolks (beaten)
  • Two egg whites
  • Thirty grams of sugar or 15 grams of stevia
  • 75 grams of chopped chocolate (better for desserts) and
  • One charge of gas.

Preparation

Once you have the ingredients at hand, gently heat the cream, milk, and sugar in a saucepan. As soon as it steams, add the liquid to the beaten egg yolks little by little. Then pour the mixture back into the saucepan and stir over low heat. Add the chocolate chopped chocolate and whisk.

At this point, the mixture is ready, and you can let it cool.

Continue to beat the egg whites and add to the mixture when cold.

Is the mixture ready? Add it to the siphon and stir. Let it stand for about 2 hours in the refrigerator. Then remove the siphon, shake again and serve the foam on your favorite desserts.
